sweet & sour(ish) chicken
1 small bottle tomato sauce (can be cheap stuff)
1 tblsn Worcester sauce
2/3 cup dry sherry (or 1 cup red wine)
basil, garlic, rosemary, coriander, salt + pepper to taste
2 pkt skinless chicken breasts
. slice chicken breasts into strips, as you'd do it for stir fry.
. lightly dust the strips in seasoned flour (flour + salt + pepper)
. shallow fry the chicken breasts until they start to turn a golden colour.
don't worry about cooking them through, see next step.
. mix tomato sauce, sherry, Worcester sauce, herbs & spices to make a
sauce. You'll have to experiment with the combinations you find something
you like - it should be slightly piquant.
. mix the sauce and chicken and bring to the boil
. simmer over a very low heat for 15 - 20 mins
. serve with fried rice
