roast chicken pieces
1 tin peach slices
2 tspn crushed ginger (fresh!)
1 clove garlic, crushed
1 pkt chicken pieces (can be legs, breasts, whatever)
cornstarch
salt + pepper to taste
. preheat an oven to 180'C
. lightly grease a roasting pan
. dust the chicken pieces with seasoned flour (salt + pepper + flour)
. arrange the chicken pieces in the roasting pan
. drain the peach slices, preserving the syrup
. arrange the peach slices on the chicken pieces
. sprinkle about 2/3 of the garlic over the chicken
. roast for 30 - 45 minutes (will depend on what chicken pieces you use)
. in a small sauce pan, bring the peach syrup, ginger and remaining garlic
to the boil. season with salt + pepper
. add about 2 tspn sieved cornstarch and simmer until it thickens.
. serve the chicken pieces and peach slices - top with the sauce.
This is very nice with basmati rice & a green salad :)
