cheat any-flavour mousse (aka jelly whip).
1 pkt jelly powder - whatever flavour you want
1 - 2 l icecream (I usually use about 1/2 - 3/4 of a tub).
whipped cream, etc to top
. allow the icecream to soften for half an hour or so
. make up the jelly, except use half the normal quantity of water (1/2 the
amount of hot, 1/2 the amount of cold).
. when the jelly just starts to set (still liquid), pour the jelly and spoon
the iceream into a large bowl. (the icecream should be soft, but not melted).
. with an electric beater, mix the two together, trapping as much air as
possible.
. put into the fridge to set for a couple of hours (will set in 30 min in the
freezer)
. decorate with whipped cream, etc.
